  1. Spray a large pan or wok with the cooking spray. Add the onion and pepper and cook until soft.
  2. Add the pancetta and cook for 2 minutes. Add the chicken and cook until browned.
  3. Add the risotto arborio rice and cook for 2 minutes until translucent.
  4. Add 200ml of the vegetable stock to the pan, enough to cover the ingredients, and bring to a simmer. Stir in the remaining vegetable stock 100ml at a time until absorbed and the rice is to 'taste'…al dente, soft with a bite.
