  1. Make ready 1400 ml whole milk
  2. Take 600 ml heavy or double cream
  3. Prepare 2 Vanilla bean pods split with seeds removed
  4. Make ready 3/4 piece freshly grated nutmeg
  5. Prepare 3 cinnamon sticks
  6. Get 350 ml vanilla spiced rum
  7. Take 7 large eggs
  8. Prepare 200 g granulated sugar
Instructions to make Family favourite Christmas EggNog:
  1. Combine milk, cream, nutmeg, cinnamon sticks, and vanilla seeds and the pods into a large saucepan. Bring to the boil slowly then remove from the heat
  2. Whisk the egg yolks and sugar together until thick ribons form, then slowly add and whish into the milk mixture
  3. Add the Rum and continue slowly whisking with a hand whisk. Rum can be substitued for brandy.
  4. Allow to steep over night in the fridge
  5. Sieve out the mixture removing the cinnamon and vanilla pods
  6. Whisk egg whites until soft peaks form. Fold into the milk mixture and serve in christmasy glasses or mugs
  7. Garnish with freshly grated nutmeg and a cinnamon stick, with a mini gingerbread man at the side to dip in :)

  9. If heating through serve before allowing to steep and do not add the egg whites. Do not reheat
