  3. SAUCE: Heat a pan with 3 tbsp oil. When hot, add 15 garlic (chopped) and the onion (chopped finely). Cook for two minutes. Add in 1/2 tsp oregano, 1/2 tsp basil, and 1 tsp chili flakes—mix and cook for another minute.
  4. SAUCE: Add tomato purée to the pan and 1 tsp salt. Mix well. Cover the pan and cook for five minutes. Allow the liquid to boil out for 10-15 minutes on low heat.
  5. SAUCE: Add the 1/2 tsp sugar and the 1/2 tsp paprika once the sauce is well cooked, and then turn to medium to cook for 4 minutes..
  6. SAUCE: Add 3 tbsp ketchup and mix for 2-3 minutes. Let sauce cool down completely before putting it in the blender to grind to a fine paste.
