Trichosanthes cucumerina is a tropical or subtropical vine. Its variety T. cucumerina var. anguina raised for its strikingly long fruit. In Asia, it is eaten immature as a vegetable much like the summer squash and in Africa, the reddish pulp of mature snake gourd is used as an economical substitute for tomato.   1. Scrap the snake gourd outer skin lightly, wash thoroughly, cut into 8 pieces, scoop out the inside portion.
  2. Boil 2 cups of water add salt and put the pieces, cover and let it cook for 10 min
  3. Remove and spread it on a kitchen towel.
  4. Meantime wash the meat, drain the water completely add salt, turmeric powder, chilli powder, garam masala powder, mix well and keep aside.
  5. Scrap carrot, keep a deep pan on fire add 3 tbsp oil, add onion cook until brown, now add peas, ginger garlic pieces, cook until peas become soft, the meat should be well fried and add scrapped carrot saute for 5 mins, add lemon juice, remove and keep. Let it cool.
  6. Keep a pan on fire, pour oil for shallow fry.
  7. Take snakegourd stuff the minced meat tightly, cover both the ends with the paste, immediately put in oil, fry in low flame, turn gently and fry until golden brown.
  8. Fry 2 at a time, and enjoy with any spicy dip as you wish
  9. Ready to serve and ENJOY!
